Summary

The Lacey Swiss is our lower fat lower sodium version of the Baby Swiss. The Lacey has a smaller eye formation. The holes are smaller because of the different process in making it. If you check out our Cow to Chow section where we press the first time, We actually don't press our Lacey at all. It might be a lower fat and lower sodium, but it remains quite flavorful. Ideas For Eating

  • pizza (gets stringy when melted)
  • lasagna (almost any pasta)
  • cubed for salads
  • party platters
  • appetizers

To maximize flavor of our cheese, leave the cheese to warm to room temperature before eating. The warming will also give a creamier texture.
